Chocolate Ice Cream

This MimicCreme stuff works so well for instant ice cream! Here's the recipe from the manufacturer's Web site, although when I made it, I only had 1 cup of creme left, so I cut this recipe in half, which resulted in just enough dessert for two. In Portland, you can usually purchase MimicCreme at Food Fight Grocery, though they have been out of stock the last couple of times I went there (if you want to stock up your pantry, an order of six quarts will get you free shipping from the manufacturer, who says the stuff has a shelf life of one year unopened).

2 cups MimicCreme Sweetened
2 tablespoons organic cocoa powder
1 to 1 ½ tsp vanilla extract, to taste

Combine all ingredients in blender. Blend on high until fully incorporated. Add mixture to ice cream freezer and prepare as per manufacturer's instructions.
