Vegan Cream Cheese Frosting

This is a great frosting for many different kinds of cakes and desserts.

1/4 cup Earth Balance butter
1 tub Tofutti plain cream cheese
2 to 3 cups powdered sugar
2 teaspoons lemon juice

Cream butter and cream cheese. Add sugar, a little at a time, until thick. Add lemon juice and beat well. Add a little more powdered sugar to achieve desired consistency. Best to keep anything with this frosting refrigerated. Makes enough for one two-layer cake.
