This recipe is a veganized adaptation of my Mom's. And because it is a no-bake cookie, it is also one of the first cookie recipes she taught us kids to make.
2 cups evaporated cane juice sugar
6 tablespoons cocoa powder
1/2 cup EarthBalance butter
1/2 cup soy milk
3 cups oatmeal
1 cup coconut
1/2 cup chopped nuts (optional)
In a pot, place the sugar and cocoa powder; mix well. Add the butter and soy milk, and bring to a boil. Stir in the remaining ingredients and drop by spoonfulls onto wax paper. Let cool completely before transfering to a container. If still soft, then refrigerate to harden further.
