Creamy Garlic Salad Dressing

Adapted from The Bold Vegetarian Chef.

6-8 garlic gloves, with their skins still on
1-1/4 teaspoons miso
2-1/2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
2 teaspoons agave syrup
1/2 teaspoon salt

In a dry skillet over medium heat, toast the unpeeled garlic, tossing occasionally; allow to brown in spots; about 10-12 minutes. Cool, then peel. Place garlic in blender with other ingredients and process until smooth.
