Roasted Wheatmeat with Mushroom Stuffing

Over at, Robin Robertson -- the author of some of my favorite vegan cookbooks -- has shared several recipes from her Thanksgiving menu that features Roasted Wheatmeat with Oyster Mushroom and “Sausage” Stuffing. Yesterday I already gave my own adaptation a test run, sans sausage, and it turned out interesting. I think I will continue to play with her recipe and see what we can come up with for Thanksgiving this year.
