Vegan Turkey Roast

I just can't get over how wonderful this turned out! I made a batch after Thanksgiving for the heck of it -- and I've been using it in all sorts of ways. This is an adaptation of the recipe (and video) posted by Brian P. McCarthy on Everdaydish.tv.

2-1/2 cups vital wheat gluten flour
1/2 cup nutritional yeast flakes
1 teaspoon dried thyme
1 tablespoon onion powder
1 teaspoon salt
2 cups vegetable broth
1/4 cup olive oil
1 tablespoon soy sauce

Preheat oven to 350 degrees. In a large bowl, whisk together the flour, nutritional yeast, thyme, onion powder, and salt. In a small bowl, whisk together the vegetable broth, olive oil, and soy sauce. Add the liquid to the dry ingredients and stir just until combined. Form into a loaf shape and place on a lightly oiled piece of aluminum foil. Wrap tightly, twisting the ends. Repeat with a second piece of un-oiled foil. Place in a 9x13 cake pan and fill the pan just over half way with water. Carefully place in oven and roast for about 90 minutes. Cut open and peel back the top of the foil and continue roasting for another 10 minutes until firm and golden.
